Mulled wine

Just love mulled wine and we make it on Christmas eve  we don't use sachets of mulled spices but make it ourselves and then get slowly sloshed while we prep up the turkey for the big day.

recipe

200g sugar melted in a big pan with a splash of water once melted add the following into the pan
add 2 bottles of wine (more if you like)
peel and juice of a clementine you can also cut up another and add rings of the fruit to make it look pretty
peel of a lemon
peel of a lime
6 cloves
2 star anise
1 cinnamon stick snapped
3 bay leaves
Grated nutmeg from a whole meg
1 vanilla pod split in two length ways
a very very generous splash of cognac

heat all gentle and make sure it does not go over 60c else your loose all the alcohol

drink enjoy and be very merry
