Left over turkey Green thai style

Ali loves pie but that's because he is a man, i like pie as it is a great way to stretch really tasty food a long way.  With the left over turkey i made these green thai pies.



I blitzed up some green chillies, red onion, lemon grass, garlic, lime zest and juice, cumin seeds, tamarind paste, turmeric, and soya sauce with a little sesame oil and a lot of fresh coriander.
I then chopped up some red pepper into small bits for the pie and blanched some green beans and added a few whole leaves of coriander, you can add small chunks of broccoli to bulk out the food if you want to eat this as a plate of curry with rice and if you do this add the whole can of coconut milk the creamy and water part. I wanted mine for pies so i only added the cream part of the coconut and didn't add the water part as this would make my pies soggy and the mix far to wet. This is a great pie to have with a big crisp salad.  when cooled i wrapped these up individually and put in my freezer.
