Left over gammon quiches

With our monster gammon i like to turn some of it into food to last a few more month throughout the year so made some quiches.



Sophie loves these for her dinner and they are good to get out of the freezer in the morning if i want one for lunch.
So easy to make i just chop some of the gammon and grate some cheese and use some of the left over un flavoured Christmas cream and whisk it in with some eggs and milk and then assemble gammon first then cheese and egg mix in the ready rolled pastry cases.  20 mins at 180 then when they are cooled i wrap them individually  and put them in the freezer.

with the left over scraps of pastry i roll out with some black sesame seeds and grated parmigiana and use some of my more unusual cookie cutters to make little snacks for Sophie.
