This weeks theme anything Vegetable cake based
Because the house smells great with fresh baking and its always nice to lick the spoon of your creation and share a slice of cake.
Its nice to have some home baking in the house for the week, to feed hungry mouths when they come home from school, having tea and cake with fellow mummies over a play date, or 4 o'clock snacks between lunch and dinner wouldn't be the same without a cookie or two.
What ever the reason its good to get into the kitchen especially with little ones to give them the practical skills in measuring, mixing and taste as well as satisfaction that they have created and cooked something themselves.
Every 1-2 weeks I will be sharing a cake recipe because I cant share a slice of cake with you and I encourage you to share a slice of your home baking with me and anyone else that links up to this post. This Recipe is from Delia and is one of the most delicious carrot cakes i have ever had. Carrot cake is one of my favorites and i have eaten a fare few in my years but have always been left feeling disappointed by bland sponge covered in over sweet white frosting. This carrot cake is a more of a warm spicy version with cinnamon and mixed spice that will leave your house smelling divine as you cook it, and it almost reminds me of Christmas.
There is rather a lot of ingredients used but the cake is so nice its worth it:
Ingredients
For the Cake
175g dark brown sugar
2 large eggs
150ml Sunflower oil
200g wholemeal self raising flour
3 tsp mixed spice
1 tsp bicarbonate of soda
200g carrots peels and grated
grated zest of 1 orange
110g sultanas
50g desiccated coconut
50g walnuts toasted (5 mins in the oven)
For the syrup glaze
75g dark brown sugar
juice of the orange
1tbsp lemon juice
For the cinnamon icing
1 heaped tsp cinnamon
2 tbsp milk
1 heaped tbsp golden sugar

I don't have Sophie this week bossing me about the kitchen as she is off at summer camp having plenty of fun doing thing girls should be. So i have my lovely friend over guest baking with me, not only did we bake this amazing cake but we did sweet and savory breads too Go Us !!!
The cake bit
Whisk sugar eggs and oil
Sift and fold together all the dry ingredients put all the bran back in the cake from the sieved flour
Add the rest of the cake ingredients and fold in
cook for 30 mins at 170c
The icing bit
Whisk all the icing bits together and chill while the cake cooks
The syrup bit
Warm the fruit juices and sugar together
When the cake is cooked poke holes over the cake and pour the syrup while the cake is in the tin and let the cake cool and soak up the syrup
when the cake are cooled cover with the icing and more toasted walnuts
Carrot cake is an all time favourite of mine. This one looks great and easy to make too. I hope Sophie enjoys her summer camp.

Deletethat carrot cake looks sooooo good - I would love to put nuts in mine but the kids won't eat it if I do! Carrot cake has to be my favourite cake of all.

DeleteCarrot cake is my OH favourite cake, nice and easy too. My sister made a courgette cake last week, I was surprised that it tasted pretty similar to carrot. Nice to see a picture of you in the post this week!
