Beetroot and apple soup

With Hubby working from home and sophie running about Lunch is one key point of the day, looking for something a bit different from the norm i being a lover of soup this soup sounded just the ticket.


Ingredients
500g beetroot
500g bramely apples
2 red onions
1 tsp caraway seeds
1 tsp Cumin seeds
2 star anise
1 litre of vegetable stock
for the cream
150ml sour cream
1 tbsp horseradish sauce
juice of half a lemon

1 Roast the beetroot in the oven for an hour then peel and chop, i have also tried this with the pre peeled beetroot's and it also works however i cover them in foil when they go in the oven, roasting i found give a deeper flavour to the vegetable.

2 Heat a pan and add chopped onions, apple and the caraway and cumin and star anise and soften once softened add the beetroot and stock and bring to the boil and then simmer for 10 mins.

3 Discard the star anise and use a stick blender to carefully blend the chunks of vegetable and fruit into a smooth soup

4 To make the cream add the horseradish and lemon juice to the sour cream and mix. ladel your soup into a bowl and add a generous blob of cream in the centre and enjoy.

Both hubby and i thought this was a really nice soup with the first mouthful you have thinking ok this is different and has good flavours and when you finished the bowl your looking for more.
