As said in my rosehip-tea post rose hips are really good for you packed with loads of vitamins, little ones may not enjoy drinking tea but this sweet treat is always appreciated by Sophie. Great on pancakes, ice cream and my favourite snack yoghurt with rose hip syrup.
Easy to make i use a 2lb of rosehips washed topped and tailed and then wizzed in the food processes add to a pan with 5 pints of water and bring to the boil once boiling turn off the water and leave to steep for 15 mins, pass through muslin to get rid of the bits and you can choose to reuse this for a second boil to get more syrup. with the rosehip juice add 1lb of sugar and melt, once melted rapid boil for 5 mins and put into sterilised jars, store in a dark cool area and once opened store in the fridge, however this wont last long as it is very tasty.
