Damson batter buns


With all the lovely damsons we foraged for most went into making damson wine but i saved some to make some damson batter buns for Sophie as her favourite word is CAKE ! and its a good way to sneak fruit into her.


350g Damsons
275g Plane flour
2 tsp Baking powder
1/2 tsp Bicarbonate of soda
200g Caster sugar 
2 Eggs
100ml Sunflower oil
250ml Natural yogurt
pre heat oven to 180c and cook for 20 mins

 De stone and cut up the damsons and leave to one side, then measure out you flour, bicarbonate soda, baking powder and sugar and sieve together. Next whisk your eggs and add the oil and yogurt as you can see Sophie is a dab hand at whisking eggs now and is a great little helper in the kitchen.
Slowly add your egg mix to the dry mix and then add your damsons and put into pre greased muffin tins and place in the oven for 20 mins, these are best eaten warm. As soon as these came out of the oven Sophie started shouting CAKE !! and she sat happily scoffing warm damson batter buns and was very contented.
