Cherry Ice cream and Marshmallow ice cream

Fed up with the rain Sophie and i thought we might try and chase those clouds away and make some summery ice cream to cheer us up, i make all my ice creams by hand so its a good fun activity for Sophie to be involved in and after stumbling across a book called the Icecreamist we were inspired by some of the recipes.

Ice cream recipe 
250ml full fat milk
125ml double cream
2 egg yolks
88g caster sugar
pinch of salt
250g philadelphia cheese
1 tin of black cherries
slug of cherry liquor

1 First of all you need to make an ice cream base by pouring the milk and cream in to a saucepan and gently heating until it steams.

2 Whisk the egg yolks and sugar and slowly pour the heated milk into the yolk while whisking then return to the heat and heat gently and stir until the mixture thickens and coats the back of the spoon.

3 Allow to cool over night then add the soft cheese even though the recipe calls for mascarpone cheese i used philadelphia and it was delicious, whisk this in add a good slug of cherry liqueur and the fruit and some of the syrup from a tin of black cherries ( the addition of cherry liqueur and black cherries was my input as the original recipe has no liqueur and uses Amarena cherries). 

4 Pour into a plastic container and put in the freezer.  If your making by hand like me then set your alarm on the cooker for 1 hour and every hour for 3 to 4  hours go and whisk the ice cream to break up the ice crystals your notice that the ice cream become more like ice cream after about 3 or 4 hours then allow to freeze over night


 Marshmallow ice cream

Recipe
125ml full fat milk
65ml double cream
1 egg yolk
44g caster sugar

Do the steps 1 to 4 above but instead of adding Cherries and liqueur swap this out for marshmallow i also added chocolate drops and this made a fun digging ice cream to find different little bits of treats while eating.
