Friday nights home made kofta kebabs


Mmm kebabs are great, not the greasy version you get from the pub on the way home after too many beers something we probably all scoffed up when we were in our 20's.   However i don't think my heart and ever expanding waist line of middle age spread could take eating that version any more. Here's a kofta kebab version that is fresh healthy and very tasty minus all that grease.


I have made this kebab with both meat from the shoulder and neck fillet that i have food processed myself and with lamb mince and i prefer using the lamb mince as it holds the shape better where as the processed meat is softer in texture making it tricky to turn in a pan.

i haven't used any measurements as i like to chuck a bit of this and that in

first i have my lamb meat as mentioned above if your using lamb mince don't food process it

to this i add the following ingredients that have be food processed
a few cloves of garlic
1 red onion for the colour
2 big red chillies again great colour
big handful of pistachios another nice colour
lemon zest from whole lemon
2 big pinches of thyme
2 big pinches of cumin
salt and pepper
2 big dollops of horse radish sauce which i use to bind the mix together

this will then look like a thick meat paste which you can shape by hand with a little flour on your hands to stop the meat sticking, these are great to make big batches of to put in the freezer to make a quick supper from.  They can be cooked either in the oven, on a griddle or on the BBQ.  Just add into a warm pitta with a big juicy salad and a greek yogurt and mint sauce dressing, very healthy and tasty.
