So what's a couple of girls to do but make a delicious cheese cake together, so hands washed and step ladders out for Sophie we get mixing and baking. I'm not going to list the recipe as usual in case the Hummingbird come and pecks me but its well recommend buying the book as there are loads of scrummy recipes to keep you occupied with baking for months.
We made our base from good old digestives biscuits and squashed and patted it down, Sophie is rather a dab hand at this and enjoyed the task.
After whipping up the cheese part of the dessert we added some frozen raspberries and blueberry's and gave the mix a good stir my mini hummingbird is very thorough with the stirring. Once mixed it is put on top of the base and put in the oven to bake.
This was one of the nicest lightest tasting cheesecakes we had ever had, not at all like those baked new york style cheesecakes that sticks to the roof of your mouth and makes you feel like you just consumed a billion calories. The cheesecake was so moreish fruity and delicious its hard not to have 2 helpings which we both failed miserably at, Yummy this will defiantly be made again.
