Rose petal syrup


We are lucky to have an abundance of roses in our garden some of them at the top of our garden that cant be seen, so i had to  have a think about how else to put them to good use and thought i would try some Rose petal syrup as all rose petals can be eaten.


I picked and thoroughly washed 8 oz of petals, my roses don't have any insecticide spray on them but you need to wash to remove any creepy crawlies. Once washed add to a large bowl and add 8oz of sugar, then employ a small child to bash rose petals.  Sophie ate loads of the sweet scented petals so i had added an extra handful in for good measure as they are rather scrummy.  


Leave overnight and the next day place in a pan with 2 pints of water and the juice of 2 lemons and another 8oz of sugar and simmer for 20 mins all the sugar will melt do not boil while the sugar is melting down else this will burn.  
Once the sugar has melted and incorporated into the mix bring to the boil for 10 mins and i add some certo to my mix which is pectin to help it set use a sugar thermometer to bring the jam up to 102.  Then put into sterilised jars to use when required.  I had mine on a scone with a nice cup of tea.
