Sophisticate, bright, zesty and light this is a great pallet cleanser and a lovely dessert which is also simple to do.
Ingredients
180ml water
180g sugar
zest of 2 grapefruits
juice of 4 grapefruits
pinch of salt
200ml pink champagne
- Combine water and sugar, grapefruit zest in a small pan and heat until the sugar is dissolved
- pour in the grapefruit juice and stir and then chill
- strain the mixture and add the champagne
- you can either put this in the freezer and stir every hour to break up or best add to an ice cream machine and chill for 50 till its ready then add it to a tub and freeze overnight
When you want to eat just break up with a fork and serve
