Pesto




I grew some amazing basil plants this year, normally i don't get such spectacular results but the bushes were huge.  It did pose a bit of an issue as nearer the end of summer they were still huge even though i had picked loads of leaves off for tomatoes salads etc, and were moving into colder weather so wanted to preserve all my lovely basil for the autumn months.  So made Pesto which is a doddle and loads tastier than shop bought.

All i did was put all my basil in a blender with 3 tbsp of toasted pine nuts, a few garlic cloves and 100g of grated Parmasan, the fresh stuff not that awful stuff in a pot, god i sound like a Parmasan snob now. Then Blitz and feed a good quality olive oil into the mix while processing till you have a lush green sauce.  put into a jar and cover a layer of olive oil on top and pop into the fridge for a week to mature.

Not only good for Pasta which Ali cooks with my home made bacon but its really nice onto of a good fillet of cod roasted in the oven.
